Food Network champion pitmaster Erica Blaire has some wise words for anyone feeling overwhelmed by lengthy, mouthwatering barbecue menus.
A long list of smoked, grilled, and fried meats, family-recipe sides, and specially prepared cuts can be a lot for the untrained eye. But Blaire is here to help.
She says there are two dishes worth splurging on (brisket and ribs) and one rare find that she calls her personal go-to (pastrami).

There’s also one category, according to Blaire, that might not be worth your cash if you’re being choosy. In that case, she suggests you skip anything that’s not actually barbecue.
“Remember, you came to a barbecue restaurant for barbecue!” the chef says.
So even if there’s a “monster burger” or loaded tater tots you may have seen on TikTok or Instagram, those are the items you can eliminate from your order in the name of cutting down on your total bill.
Yes, she admits, you’ll probably get a great picture for your socials, but Blaire’s advice is to “keep those for another day.”
